IN THAI CUISINE THESE CHILIES ARE HIGHLY VALUED FOR THEIR FRUITY TASTE AND EXTREME SPICINESS. THEY ARE EXTENSIVELY USED IN MANY THAI DISHES, SUCH AS IN THAI CURRIES AND IN THAI SALADS, THE GREEN AS WELL AS THE RIPE RED CHILIES ARE USED. THEY MAYBE BE EATEN RAW ON THE SIDE, OR WRAPPED WITH BETEL PEPPER LEAVES WITH OTHER CONDIMENTS AND A DIP.
THE CHILLIES ARE CAREFULLY SELECTED: SANITISED, PUT ON TRAYS OR IN BAGS, AND PRE-COOLED BEFORE SHIPMENT.
